Tomato, quinoa and lime salad with chilli olives
This easy to prepare protein-packed salad mixes lovely smoky flavours with hot chillies – don’t say we didn’t warn you.

Ingredients:
- 1 pack unearthed® Smoked Mixed Antipasti
- 1 pack unearthed® Olives with Hot Peruvian Chillies
- Pack of quiona
- 1 lime
- Handful of fresh basil
Method:
- Take out the tomatoes from the antipasti mix
- Chop the basil leaves
- Mix together the quinoa, tomatoes, basil and a handful of olives
- Share between two plates
- Squeeze over the lime and drizzle with a little of the oil from the antipasti pack
- Garnish with a few chillies…as many as you dare!
Tom's top tip: You can always replace the Smoked Tomatoes (in the antipasti mix) with our Slow Roasted Semi-Dried Tomatoes or fresh tomatoes
