Tomato, Chorizo and Chickpea Soup
The ultimate in comfort food – a delicious warming tomato and chorizo soup. Perfect with a wedge of fresh bread

Ingredients:

- 200g unearthed® Chorizo de Leon
- 1 white onion
- 2 garlic cloves
- 1 tin chopped tomatoes
- 20ml olive oil
- 240g tin chickpeas
- 200ml vegetable stock
- Pinch of salt and black pepper
Method:
- Dice the onion, then fry in the olive oil, adding the garlic and cooking on a medium heat until soft
- Roughly chop the chorizo and fry for a further minute
- Tip in the tinned tomatoes and vegetable stock and bring to the boil
- Add the chickpeas, season to taste, then reduce to a medium heat and cook for 15 minutes
- Serve with some chunky fresh bread
