Spicy Chorizo Pasty
Pasties are another picnic and lunchbox favourite. We’ve taken the recipe, adapted it slightly and discovered that Hot Spicy chorizo tastes good in a pasty!

Ingredients:
- 190g unearthed® Hot Spicy Cooking Chorizo Sausage
- 1 packet of short crust pastry
- 4 slices of smoked bacon, diced
- 2 medium potatoes
- 1 medium carrot
- 1 medium white onion
- 1 medium red onion
- 1 large clove of garlic
- 2 tbsps olive oil
- 1 tsp oregano
- 2 tsp smoked paprika
- Large pinch salt & pepper
- 75g plain flour
- 1 egg
Method:
- Remove the skin from the Hot Spicy Cooking Chorizo and dice
- Peel and dice the onions, carrots and potatoes. Finely chop the garlic
- Gently fry off the white and red onion for a couple of mins
- When soft add garlic, Hot Spicy Coooking Chorizo, bacon, potato and carrot and cook for a futrher 6-7 mins
- Add the oregano, smoked paprika and salt and pepper and cook for a further 3-4min, remove from heat and cool
- Sprinkle a little of the flour on the worktop, then roll out short crust pastry and cut out six circular discs
- Split the mixture between the six pastry discs,then egg wash the outer edge
- Carefully fold the pastry disc over so the edges meet then crimp the edges together
- Place on baking tray, thenusing a sharp knife prick each pasty once and egg wash
- Cook in a pre-heated oven at 170°C (fan assisted)/ Gas Mark 5 for 30 mins
Tom's top tip: For a less spicy pasty replace the Hot Spicy Cooking Chorizo with our Smoked Cooking Chorizo
