South American Chicken with Pineapple Salsa

  1. Chop the pineapple in small chunks
  2. Finely chop the red onion, spring onion and chilli
  3. Mix together in a bowl
  4. Add the lime juice and mix thoroughly

Tom's top tip: You can always use ready-chopped pineapple pieces, to save time
