Sobrasada, Avocado & Fennel Ciabatta
Spicy Sobrasada topped with creamy avocado makes a great breakfast or light snack and fennel seeds add a hint of fragrant aniseed

Ingredients:
- 75g unearthed® Sobrasada de Mallorca
- 1 ciabatta roll cut in half
- 1 avocado
- 2 tsp fennel seeds
- 1 tbsp olive oil
- 1/2 un-waxed lemon, zested and juiced
Method:
- Cut the ciabatta roll in half and place on a tray
- Drizzle 1 tbsp of olive oil over your ciabatta halves and put under the grill till they are warm and just starting to crisp
- Meanwhile slice your avocado into strips and drizzle with lemon juice (so as not to go brown)
- Evenly spread the unearthed® Sobrasada de Mallorca onto the warm ciabatta half
- Fan half the avocado on each piece of ciabatta
- To finish sprinkle with lemon zest and fennel
