Smoked Chorizo Hash

A delicious hash of chorizo, potatoes, eggs & tomatoes. That’s brunch sorted!

  • 1 pack of unearthed® Smoked Cooking Chorizo
  • 1 white onion
  • 200g of new potatoes
  • 1 red pepper
  • 3 eggs
  • 1 garlic clove, finely chopped
  • 3 large vine tomatoes
  • 30 ml of sunflower oil
  • 20g paprika
  • Small bunch of small parsley
  • Pinch of salt & black pepper


  1. Peel and chop potatoes into quarters
  2. Boil until soft (just under 10 minutes), then drain and leave to cool
  3. Whilst potatoes are cooking dice the onion, red pepper, garlic, Smoked Chorizo and tomatoes
  4. Fry in a large oven-proof pan, add paprika, salt and pepper
  5. When vegetables are soft add potatoes, parsley and mix together
  6. Crack eggs into the mix, slightly spaced out and place into hot oven
  7. Cook for 4 minutes for a soft yolk. Increase oven time for a harder yolk depending on your taste
  8. Serve with some bread, for mopping up the egg
