Smoked Chorizo Hash
A delicious hash of chorizo, potatoes, eggs & tomatoes. That’s brunch sorted!

Ingredients:

- 1 pack of unearthed® Smoked Cooking Chorizo
- 1 white onion
- 200g of new potatoes
- 1 red pepper
- 3 eggs
- 1 garlic clove, finely chopped
- 3 large vine tomatoes
- 30 ml of sunflower oil
- 20g paprika
- Small bunch of small parsley
- Pinch of salt & black pepper
Method:
- Peel and chop potatoes into quarters
- Boil until soft (just under 10 minutes), then drain and leave to cool
- Whilst potatoes are cooking dice the onion, red pepper, garlic, Smoked Chorizo and tomatoes
- Fry in a large oven-proof pan, add paprika, salt and pepper
- When vegetables are soft add potatoes, parsley and mix together
- Crack eggs into the mix, slightly spaced out and place into hot oven
- Cook for 4 minutes for a soft yolk. Increase oven time for a harder yolk depending on your taste
- Serve with some bread, for mopping up the egg
