Olive, Provolone and Artichoke Pizza

This easy-peasy pitta pizza is perfect when you fancy a quick dinner – just add a green salad and a nice cold beer!

Ingredients:

Method:

  1. Pre-heat the oven to 180°C (fan oven) or Gas Mark 6
  2. Shake the pots thoroughly before opening and chopping the olives, cheese and artichokes
  3. Blitz the tomatoes in a hand blender until smooth
  4. Add the thyme, salt, pepper and pinch of sugar and stir well
  5. Spread onto the pitta breads, almost to the edges
  6. Spoon over the chopped olives, cheese  and artichokes
  7. Top with the finely chopped parlsey
  8. Cook in the oven for 8-10 mins, or until cheese is melted
  9. Serve immediately

Tom's top tip: To make this a veggie pizza, swap Provolone Olives, for Gouda and Cumin Olives
