Olive, Provolone and Artichoke Pizza
This easy-peasy pitta pizza is perfect when you fancy a quick dinner – just add a green salad and a nice cold beer!

Ingredients:
- 1 pack unearthed® Italian Chargrilled Artichokes with Lemon, Chilli and Mint
- 1 pack unearthed® Gouda and Cumin Olives
- 5 wholemeal pitta breads
- 300g chopped tomatoes
- 1 tsp thyme
- Salt and pepper
- Pinch of sugar
- 1 tbsp finely chopped parsley
Method:
- Pre-heat the oven to 180°C (fan oven) or Gas Mark 6
- Shake the pots thoroughly before opening and chopping the olives, cheese and artichokes
- Blitz the tomatoes in a hand blender until smooth
- Add the thyme, salt, pepper and pinch of sugar and stir well
- Spread onto the pitta breads, almost to the edges
- Spoon over the chopped olives, cheese and artichokes
- Top with the finely chopped parlsey
- Cook in the oven for 8-10 mins, or until cheese is melted
- Serve immediately
Tom's top tip: To make this a veggie pizza, swap Provolone Olives, for Gouda and Cumin Olives
