Mangalica Spicy Salami Stew with Beans

A classic. one-pot warming stew packed full of spicy Hungarian salami flavour

Ingredients:

  • 100g unearthed® Hungarian Mangalica Spicy Salami
  • 100g cannellini beans
  • 1 red pepper, cut into slices
  • 1 large onion, cut into wedges
  • 2 cloves garlic, chopped
  • 1 chilli, chopped
  • 10-12 button mushrooms, cut in half
  • 2-3 large, ripe, fresh tomatoes, chopped
  • 1 tbsp tomato puree
  • ½ stock cube
  • 1 tsp dried mixed herbs
  • 3-4 tbsp oil
  • black pepper
  • 500-700 ml water

Method:

  1. Heat the oil in a large frying pan, add onion, mushrooms and peppers and cook over moderate heat for a few minutes until soft
  2. Add garlic and chilli, cook for 2 more mins
  3. Transfer everything into a casserole dish. Add water, tomatoes, spices and cannellini beans
  4. Stir well and bring to the boil
  5. Add salami and reduce the heat
  6. Cover and cook gently for 40 mins on the hob or in the centre of the oven (140°C/Gas Mark 1) for up to 1 hour
  7. If necessary, add more water so that it’s not too thick
  8. Ladle into warm bowls and sprinkle with fresh parsley
  9. Serve with crusty bread or baguettes

 

Tom's top tip: If the tomatoes taste bitter add a pinch of sugar
