Mangalica Spicy Salami Stew with Beans
A classic. one-pot warming stew packed full of spicy Hungarian salami flavour

Ingredients:
- 100g unearthed® Hungarian Mangalica Spicy Salami
- 100g cannellini beans
- 1 red pepper, cut into slices
- 1 large onion, cut into wedges
- 2 cloves garlic, chopped
- 1 chilli, chopped
- 10-12 button mushrooms, cut in half
- 2-3 large, ripe, fresh tomatoes, chopped
- 1 tbsp tomato puree
- ½ stock cube
- 1 tsp dried mixed herbs
- 3-4 tbsp oil
- black pepper
- 500-700 ml water
Method:
- Heat the oil in a large frying pan, add onion, mushrooms and peppers and cook over moderate heat for a few minutes until soft
- Add garlic and chilli, cook for 2 more mins
- Transfer everything into a casserole dish. Add water, tomatoes, spices and cannellini beans
- Stir well and bring to the boil
- Add salami and reduce the heat
- Cover and cook gently for 40 mins on the hob or in the centre of the oven (140°C/Gas Mark 1) for up to 1 hour
- If necessary, add more water so that it’s not too thick
- Ladle into warm bowls and sprinkle with fresh parsley
- Serve with crusty bread or baguettes
Tom's top tip: If the tomatoes taste bitter add a pinch of sugar
