  1. Select a wine which complements the flavour of your antipasti and don’t pick a wine which overpowers the dish
  2. For example, our olives are typically eaten prior to a meal so you don’t want a high-tanin wine which could over power the palette
  3. The gouda cheese is very mild with a major flavour the cumin in the dressing
  4. Its earthy boldness is calmed by the refreshing fruitiness and acidity of the Pinot Grigio
