Cumin & Coriander Chicken Pittas with Raita
For a quick lunch, pair our ready-to-eat Cumin and Coriander Chicken pieces with a cool mint & cucumber raita. Add to a pitta with some salad and you’re done

Ingredients:
- 1 pack unearthed® Cumin & Coriander Chicken Pieces
- 2 pitta breads
- 50g baby leaves
- 1 tsp olive oil
- 1/4 red onion
- Handful of fresh mint leaves
- 1/2 cucumber
- 4 tbsps natural yogurt
Method:
- Lightly toast the pittas
- Dress the ready-washed salad leaves in olive oil
- Finely chop the onion
- Add to the salad mix with a dash of lemon juice
- Add a little to the pitta, and pop the remainder on the plate
- Split the chicken pieces between the 2 pittas
- To make the raita, peel the cucumber and chop the flesh into 1 cm cubes
- Chop the mint leaves, then mix into the yogurt before adding the cucumber
- Add to the chicken pittas and serve
