Cumin & Coriander Chicken Pittas with Raita

For a quick lunch, pair our ready-to-eat Cumin and Coriander Chicken pieces with a cool mint & cucumber raita. Add to a pitta with some salad and you’re done

  1. Lightly toast the pittas
  2. Dress the ready-washed salad leaves in olive oil
  3. Finely chop the onion
  4. Add to the salad mix with a dash of lemon juice
  5. Add a little to the pitta, and pop the remainder on the plate
  6. Split the chicken pieces between the 2 pittas
  7. To make the raita, peel the cucumber and chop the flesh into 1 cm cubes
  8. Chop the mint leaves, then mix into the yogurt before adding the cucumber
  9. Add to the chicken pittas and serve
