  1. Cook the chorizo skewers, according to the pack instructions, then lay out on a serving platter or board
  2. The classic wine pairing for chorizo would normally be a red wine such as a Rioja or Ribera del Duero, however an interesting choice would be to match the skewers with a sparkling wine
  3. The richer style of the Heidseck Champagne stands up to the meat, and its refreshing acidity cuts through the oiliness of the meat
  4. Its bubbles excite and awaken the taste buds, which is perfect if the Chorizo is served as nibbles prior to the main meal – in which case a red would be too overwhelming
