Ingredients:

- 1 pack unearthed® chorizo skewers
- 1 bottle Heidsieck & Co. Monopole Brut NV (Champagne, France)
Method:
- Cook the chorizo skewers, according to the pack instructions, then lay out on a serving platter or board
- The classic wine pairing for chorizo would normally be a red wine such as a Rioja or Ribera del Duero, however an interesting choice would be to match the skewers with a sparkling wine
- The richer style of the Heidseck Champagne stands up to the meat, and its refreshing acidity cuts through the oiliness of the meat
- Its bubbles excite and awaken the taste buds, which is perfect if the Chorizo is served as nibbles prior to the main meal – in which case a red would be too overwhelming
