Chorizo Sausage Rolls
A continental twist on the classic sausage roll. Perfect for picnics or pre-dinner nibbles (with a drink, of course).

Ingredients:

- 1/3 unearthed® Chorizo de Leon, finely chopped
- 1 shallot, finely chopped
- 250g sausage meat
- Handful of chopped parsley
- 1 block (375g) ready rolled puff pastry
- 1 x beaten egg
- 2 tbsp. sesame seeds (optional)
Method:
- Pre-heat oven to 180° or Gas Mark 4
- Fry the finely chopped chorizo and shallot until soft
- Allow to cool slightly, then add to the sausage and sprinkle over the chopped parsley
- Mix thoroughly – best to do with clean hands!
- Cut the pastry in half length ways
- Spread half of the mixture along one of the long edges of the pastry
- Roll into a long sausage, using egg to stick down
- Cut in to pieces of desired length
- Brush with egg and sprinkle with sesame seeds
- Repeat with second piece of pastry and remaining sausage mixture
- Bake in oven for 20 mins
