Chicken with Chorizo and Manchego, Lemon and Garlic

Marinaded chicken & creamy manchego-filled chorizo. A one-pot wonder.

  • 1 pack of unearthed® Spanish Cooking Sausages with Manchego
  • 5 chicken boneless thighs
  • 125g pack of cous cous
  • 150g mangetout
  • Half a lemon, sliced in 4
  • Marinade: 1 garlic bulb chopped
  • 1/2 tsp cumin
  • 1 tsp smoked paprika tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1 tbsp sunflower oil


  1. Pre-heat oven to 200°c degrees/ Gas Mark 6
  2. Marinate the chicken thighs in a bowl with the marinade ingredients for 20 minutes
  3. Heat an oven proof dish on the hob and cook the chicken on both sides for 1 minute each side
  4. Add any remaining marinade, the lemon and chorizo to the dish
  5. Place in the oven and cook for 15 minutes, or until chicken is cooked
  6. Pan fry the mangetout 1 minute before serving
  7. Prepare the cous cous, according to pack instruction
  8. Serve and enjoy
