Chicken Saltimbocca
Literally translated saltimbocca means ‘jump in the mouth’. We like!

Ingredients:

- 2 packs of unearthed® Prosciutto Del Poggio
- 4 chicken breasts, skin and bones removed
- 12 sage leaves
- 2 tbsps flour, for dusting
- 20g butter
- 3 tbsp olive oil
- 100 ml dry white wine
- Vegetables to serve
Method:
- Slice each chicken breast into 3 long strips
- Top with a sage leaf and wrap with a slice of the Prosciutto del Poggio, making sure that chicken and sage are well enclosed
- Repeat with the remaining chicken strips
- Dust them all lightly in flour
- Heat the oil and butter in a heavy non stick pan and add the prosciutto-wrapped chicken
- Sauté on all sides, for about 5-6 mins until lightly browned
- Now add the wine and simmer for another 3-4 mins until sauce is reduced by half
- Season to taste
- Serve as finger food with crusty bread or as part of a main dish with roasted vegetables
