Chicken Saltimbocca

Literally translated saltimbocca means ‘jump in the mouth’. We like!

  • 2 packs of unearthed® Prosciutto Del Poggio
  • 4 chicken breasts, skin and bones removed
  • 12 sage leaves
  • 2 tbsps flour, for dusting
  • 20g butter
  • 3 tbsp olive oil
  • 100 ml dry white wine
  • Vegetables to serve


  1. Slice each chicken breast into 3 long strips
  2. Top with a sage leaf and wrap with a slice of the Prosciutto del Poggio, making sure that chicken and sage are well enclosed
  3. Repeat with the remaining chicken strips
  4. Dust them all lightly in flour
  5. Heat the oil and butter in a heavy non stick pan and add the prosciutto-wrapped chicken
  6. Sauté on all sides, for about 5-6 mins until lightly browned
  7. Now add the wine and simmer for another 3-4 mins until sauce is reduced by half
  8. Season to taste
  9. Serve as finger food with crusty bread or as part of a main dish with roasted vegetables
