Chicken salad with quinoa, semi-dried tomatoes and roasted peppers
Semi-dried tomatoes, succulent chicken and quinoa – a flavoursome tasty salad.

Ingredients:

- 1 pack of unearthed® Slow Roasted Semi-Dried Tomatoes
- 2 chicken breasts, sliced
- 200g red and white quinoa (we like the Merchant Garner ready-to-eat packets)
- 150g chargrilled roasted peppers
- Handful of chopped parsley
Method:
- Grill or oven cook the chicken breasts
- Allow to cool slightly, then cut each one into slices
- Heat the quinoa according to pack instructions (if using ready-to-serve)
- Divide the quinoa between two plates, then add half the peppers to each plate
- Drop over the tomatoes, then top with a sliced chicken breast
- Sprinkle over the parsley, then drizzle a little of the tomato oil
- Season, according to taste, then serve
