Chicken salad with quinoa, semi-dried tomatoes and roasted peppers

Semi-dried tomatoes, succulent chicken and quinoa – a flavoursome tasty salad.

Ingredients:

Method:

  1. Grill or oven cook the chicken breasts
  2. Allow to cool slightly, then cut each one into slices
  3. Heat the quinoa according to pack instructions (if using ready-to-serve)
  4. Divide the quinoa between two plates, then add half the peppers to each plate
  5. Drop over the tomatoes, then top with a sliced chicken breast
  6. Sprinkle over the parsley, then drizzle a little of the tomato oil
  7. Season, according to taste, then serve
