Catalan Chicken with Chickpea Salad

For a light, but delicious, lunch this tomato, feta and chickpea salad is the perfect accompaniment to our Catalan Inspired Chicken Wings. Just add sunshine

Ingredients:

Method:

  1. Cook the chicken, as per pack instructions
  2. To make the salad drain the chickpeas and tip into a bowl
  3. Quarter the tomatoes, cube the feta and finely chop the coriander
  4. Add the tomatoes and coriander to the chickpeas
  5. Drizzle in the olive oil, then add salt and pepper to taste
  6. Finally add the cubed feta, then mix lightly
  7. Serve with the salad with the cooked chicken
