Chicken Caesar Salad

The classic Caesar salad, with smoked anchovies. A simple, tasty salad.

Ingredients:

  • 50g smoked anchovies, chopped
  • 2 cooked chicken breasts, cut into strips
  • 1 cos/romaine lettuce
  • 1 ciabatta roll
  • 3 tbsps mayonaise
  • 1 tsp lemon juice
  • 1 tbsp Grana Padano cheese, grated
  • Salt and pepper
  • 2 tbsp olive oil

Method:

  1. Tear the ciabatta into small pieces, then add to a frying pan with a tablespoon of heated olive oil.
  2. Fry until slightly browned and crispy, then leave to cool
  3. Rip up the lettuce and place into a salad bowl
  4. Add the chicken strips and cooled croutons
  5. In a separate bowl mix the mayonnaise, lemon juice, sliced anchovies and grated cheese.
  6. Reduce the thick consistency by adding a little warm water
  7. Spoon the dressing over the salad and toss together thoroughly
  8. Finish with a little more grated cheese, then serve
