Baked sweet potatoes with Chorizo and Manchego

Switch from a regular jacket potato and liven up with Chorizo De Leon, Manchego and Tracklements Original Onion Marmalade. Serve with a side salad an easy weeknight dinner

  1. Pre heat the oven to 200°c degrees/ Gas Mark 6
  2. Using a fork or knife prick the sweet potatoes and place them on a baking tray
  3. Bake in the oven for 45 mins or until tender
  4. Meanwhile dice the Chorizp De Leon and fry for 1-2 mins or until crispy
  5. Remove the potatoes from the oven and cut them in half
  6. Carefully scoop out the insides and put into a bowl
  7. Roughly mash, then mix in half your manchego, half your Chorizo De Leon and the Original Onion Marmalade
  8. Spoon the mixture back into the skins and top with the remaining manchego and Chorizo De Leon
  9. Place back into the oven for 10-15 mins or until the tops are golden

Tom's top tip: Bake the sweet potato earlier in the day for a quick, hassle-free dinner
