Baked sweet potatoes with Chorizo and Manchego
Switch from a regular jacket potato and liven up with Chorizo De Leon, Manchego and Tracklements Original Onion Marmalade. Serve with a side salad an easy weeknight dinner

Ingredients:

- 120g unearthed® Chorizo De Leon Stick
- 4 Sweet Potatoes
- 150g Manchego, grated
- 2 tbsp Tracklements Original Onion Marmalade
Method:
- Pre heat the oven to 200°c degrees/ Gas Mark 6
- Using a fork or knife prick the sweet potatoes and place them on a baking tray
- Bake in the oven for 45 mins or until tender
- Meanwhile dice the Chorizp De Leon and fry for 1-2 mins or until crispy
- Remove the potatoes from the oven and cut them in half
- Carefully scoop out the insides and put into a bowl
- Roughly mash, then mix in half your manchego, half your Chorizo De Leon and the Original Onion Marmalade
- Spoon the mixture back into the skins and top with the remaining manchego and Chorizo De Leon
- Place back into the oven for 10-15 mins or until the tops are golden
Tom's top tip: Bake the sweet potato earlier in the day for a quick, hassle-free dinner
